Good Cooking Knife ?????????????

What is a good brand of chef’s knife. I have a Gerber knife from 30 years ago. Sadly it has come to the end of the road. I have looked around and can nit find another one. I would love a Gerber, but it looks like all they have are hunting knives. I tried a Wurstuff (sp?) but it fell apart. Does anyone know of a good quality knife? I am not too sure of the porcelain ones because I am rough on things.

    a troubleing problem with the knife trade is fraud, a good knife like the one you claim “fell apart” coul easily last a life time, always try to look for the genuine article.
    i have had a few Victorinox knives for rather a long time, they are rather poor though, but they are not esspecially expensive like the global range.

    I like my JA Henckels. But Wusthoff is also good.

    I have some Henckels and Wusthoffs, and they are both pretty good. My favorite are Shun classic.

    In my opinion, the best knives you can buy in the US are Cutco. The down side is your first purchase has to be made through a sales representative. Future purchases can be made on line. I have tried Henkles (? spelling) and they are ok. The wustoff that you can buy at places like Bed Bath and Beyond aren’t worth the money. On Food Network website you can buy knives sponsored by Rachel Ray that are made by Furi. I came across a Furi santoku knife at a Tuesday Morning store and bought it for $20, and it was the best knife I have purchased other than Cutco. I have never been able to find any more in a store and it appears they must be purchased online. It is an excellent knife – they actually call the santoku knife an east-west knife. These are not inexpensive knives – I got a steel on my 6 inch east west knife at $20 – they sell online for about $60, but are well worth it.

    First of all-are you male or female or female with large hands? I like Cutco blades but the handles are too small for me (male, very large hands) Henkle are good but cost too much. Maybe if I were a pro chef I wouldn’t mind but I’m not. I have a Chef’s knife made by Chicago Cutlery that fits my hand but doesn’t hold an edge long. I finally found one at True Value Hardware a few years ago that is the best. Its a “house brand” so the one you get now may or may not be made by the same company. True Value is a hardware chain that is prevalent in the midwest US.
